Spicy Meatballs in Flameware Grill Basket

Made these spicy lamb meatballs from @bonappetitmag
We traveled to Greece a few years ago and I got hooked on tzatziki. It’s a super easy cucumber, dill, garlic, and Greek yogurt dip.

Basically you grate cucumber and squeeze moisture out of it in a paper towel and mix it into the yogurt. Then you add in finely chopped dill and crush garlic. If you have a little mint or onion or lemon juice you can add that in too.

It’s perfect for topping pitas (like the two recipes on this page and the next) or putting out with veggies at a potluck.

Ingredients:
1 egg
½ cup panko
½ teaspoon cumin
¼teaspoon red pepper flakes
¼teaspoon turmeric
1 garlic clove, crushed
¼ cup parsley, finely chopped
2 tablespoons olive oil
1½teaspoon salt
1 pound ground lamb

Process:

  • Combine all ingredients in a large mixing bowl. Use your hands to knead it all together so it is evenly distributed.
  • Roll mixture into 1½”-diameter balls. Makes about 15.
  • Lightly grease the grill basket and put meatballs in. Grill over medium-high heat for 12-15 minutes until done to 145 F internally measured with a food thermometer.
  • Serve in/with pita with a little tzatziki, lettuce, and red onion.
